Needs Eatin’ Week

From 7 months of grocery shopping and being at the prime of farm produce season, we have a bounty of food that “needs eatin'” (as my grandmother would say). We decided that this week’s challenge would be to NOT grocery shop all week, and to only use what we had in our cupboards and what came out of our garden, from our CSA, or from a farmer’s market. To facilitate this process, this evening we set out all of the edible food we have in our house and divvied it up auction style. 

We’ve devised a sort of “Iron Chef” game.  Using the ingredients as we divvied them up, the two teams (Sanckens and Schaefers) will compete for the best weekly menu.  Schaefers have Thursday, Saturday and Tuesday and Sanckens have Wednesday, Friday and Monday.  Next week we’ll report on what we made, and we’ll ask you (our loyal, devoted readers) to vote on who had the most creative and tasty sounding meals.  Below are the lists of ingredients that each team received.  Feel free to contribute any recipe ideas based on what you see!

2 green peppers

roma tomatoes

14 “regular” tomatoes
diced tomatoes (2 cans)
1 egg plant

1 cantaloupe

short grain brown rice
coconut milk (2 cans)
sausage
bacon (1 package)
jalapenos (1 can)
walnuts
2 whole chickens

Schaefers
6 potatoes
4 ears of corn
2 green peppers
1 bunch of green onions
6 carrots
1 eggplant
1 pattypan squash
2 zucchini
6 tomatoes
6 cucumbers
2 apples
1 cantaloupe
black beans (2 cans)
quinoa
lentils
bacon (1 package)
eggs (2 dozen)
almonds
long grain brown rice

i find succatash a fun way to use veggies and bacon adds some yummy flavor (or i just love bacon a bit too much).

What a great idea! Guess we’re going to miss “needs eatin'” week (the expression brings back a mixed bag of memories) and will be there for “new beginnings.” See you next week.

We just made a gazpaucho with cucumber and bell peppers. Very tasty. We also like ratatouille for using up lots of veggies!
